Basundi - Hundredth day of Dr.Bella's Cusine Recipe

A famous Indian dessert popularly served at festivals and special occasions. An incredibly tasty sweet dish, prepared with milk and enriched with sugar, ghee, roast nuts and beautifully flavoured with saffron and cardomom. This has been my favourite sweet dish since childhood so it is a delight for me to share this recipe. #Basundi #SweetDish #RoastNuts #MilkSweet

Ingredients:

  • Milk - 1½ litres

  • Sugar - 4 tbsp

  • Almond flakes - 1 tbsp

  • Pistachio flakes - 1 tbsp

  • Cashews chopped -1 tbsp

  • Cardomom powder - ¼ tsp

  • Saffron - few strands

  • Ghee - ¼ tsp


Cooking method:

Step 1

Boil the milk in a wide thick base non stick pan over a high flame.

Allow it to simmer for 1/2 an hour over a medium flame, stirring often.


Step 2

Once the milk reduces to a moderately thick consistency add sugar, cardomom powder and saffron strands and mix well.


Continue to stir the milk over a low flame until the milk gets denser taking care to scrape off and stir in, the thickened milk from the sides of the pan. The consistency is that of thick condensed milk.


Step 3.

Now in an another small heated pan add ¼ tsp ghee. Once the ghee is hot add the almonds, pistachio flakes and broken cashews. Roast just enough to release the aroma and flavours (gentle browning). Add this to the prepared condensed milk pan.

Let it cool for half an hour.


Step 4

Transfer to a serving bowl and garnish with a couple of strands of saffron.

Your delicious basundi is ready. Enjoy.


Healthy tips :

Instead of cane sugar we can use natural sweetener or fruit pulp of choice for sweetness to cut down calories.

  • Milk as we all know is very rich in calcium thereby providing healthy bones and teeth .

  • Good source of protein .

  • A mixture of almonds, cashews and pistachios keeps you fit and helps keep your skin healthy.

  • High calorie foods can cause weight gain. This may work favourably in undernourished children. Not suited to diabetes or obesity.
