A supremely healthy attractive coloured chutney prepared with grated beetroot with roasted peanut, badam (almonds) and lentils. This is full of nutrients, nourishes your body with various health benefits.

Ingredients :
Beetroot 2 grated
Shallots 8
Coriander leaves - few
Mint leaves - few
Curry leaves - few
Fresh grated Coconut 1 tbsp
Urad dal 1 tbsp
Chana dal 1/2 tbsp
Peanuts 1 tbsp
Almonds - 6
Jeera 1 tsp
Fenugreek 1/4 tsp
Garlic 2 pods
ginger 1/4 inch
Tamarind -1 small gooseberry size
Salt 1/2 tsp or as required
Oil 1 tbsp
For tempering:
Oil 1 tsp
Mustard seeds 1/2 tsp
Urad dal 1-2 tsp
Curry leaves- few
COOKING METHOD:-
Step 1
To a heated pan add 1 tbsp oil .
Once the oil is hot add the following ingredients: red chilli, urad dal, Chana dal, peanut, almonds, jeera, fenugreek, garlic, ginger and tamarind and fry for 2 minutes over a medium flame.

Step 2
Now add the shallots, mint , coriander and curry leaves. Sauté for 1 minute.

Step 3.
Add the grated beetroot and sauté for 3 minutes over a low flame.
Next add the grated coconut, salt and sauté for another minute.
Step 4
Once the above contents come to room temperature transfer to a mixie or blender and grind to a semi coarse paste with adequate water and transfer to a serving bowl.

Step 4
Add the tempering of mustard seeds, urad dal with curry leaves.
