Hi all ! My next recipe is a sweet made from one of the most loved vegetables, regularly used at home, the carrot!!

Yes, this carrot laddu needs a surprisingly simple amount of frequented ingredients found in every home kitchen. It’s also healthy and has fantastic nutritive value. Prepared in a few quick and easy steps using grated carrot, coconut, milk and sugar and enriched with dry roasted almonds, cashews and pistachios, this is a delightful sweet treat that’s sure to be enjoyed by children and pastry lovers of all ages across the world.

Cooking time : 40 minutes

Prep work : 15 minutes

Cooking: 25 minutes

Ingredients:

Carrots - 6 medium size

Cashews - 8

Almonds - 8

Pistachio - 10

Milk - ½ cup

Powdered sugar - ½ cup

Coconut - ½ cup

Cardamom powder - ½ tsp

Ghee - 2 Tablespoons


Prep work :

Clean the carrot with running water, peel the skin with a peeler and grate it finely with a grater and keep aside.

Roast the cashews, almonds, pistachio in a dry heated pan for 2 minutes over medium flame. Blend this in a mixer to a coarse powder and keep aside.


Cooking steps :

To a heated pan add the ghee. Once the ghee is hot add the roasted coarse powder of nuts and sauté for a minute under medium flame.


Then add the grated carrot and cook for 5 minutes until the raw smell from the carrot leaves.


Now add the milk, coconut, powdered sugar and cardamom powder, mix well and cook for 8 to 10 minutes and continue to stir continuously, until it forms a thick consistency while the ghee separates.


Switch off the flame and let it cool to room temperature. Make as many balls with your palm as you can.


To a heated pan add the ghee. Once the ghee is hot, add the cashew. Saute till it turns half brown. Decorate with roasted cashews.


Your yummy delicious carrot laddu is ready to be relished.

Cooking tips :

Sugar can be replaced by jaggery.

Skimmed milk or low fat milk can be used to cut down on the calories.
