Ingredients:
Country chicken with bones 300 gms
Shallots 8 finely chopped
Tomato 1 finely chopped
Coriander finely chopped 1 tablespoon
Mint finely chopped 1 tablespoon
Pepper corns crushed ½ tsp
Jeera crushed ½ tsp
Saunf crushed ½ tsp
Ginger crushed 1 tsp
Garlic crushed 1 tsp
Salt ½ tsp
Turmeric powder ¼ tsp
Cooking oil 1 tablespoon
For creamy chicken soup :
Butter 2 tablespoon
Spring onion finely chopped ¼ cup
Celery finely chopped ¼ cup
Fresh sweet corns ¼ cup
Carrot finely diced ¼ cup
All purpose flour 1 tsp
Corn flour 1 tsp
Salt
Organic herbs
Prep work
I have taken country chicken with bones and flesh.
Clean the chicken with water and rinse well. Cut into small size chunks and keep aside.

Cooking method:
To cook chicken broth:
To a heated pressure cooker pan add 1 Tablespoon of oil.
Once the oil is hot add the chopped shallots, crushed ginger, garlic and saute till the onion turns translucent over a medium flame.
Add the crushed pepper, jeera, saunf and sauté for a minute.
Now add the chopped tomatoes, mint, coriander along with the salt and turmeric and sauté till the tomatoes becomes soft.
Add the chicken pieces and saute for another 2 minutes.
Now add 3 cups of water (1 cup is 250 ml).
Close the lid and secure the valve and cook for 5 whistles over medium flame (for broiler chicken 2 whistles is enough).
Once the pressure from the pressure cooker is released, open the lid and strain the chicken broth and keep aside.
Scrape off the cooked chicken from the bone, shred it and keep aside.
To cook creamy chicken soup :
To a heated pan melt the butter over a medium flame.
Sauté the chopped spring onions, celery, sweet corns and diced carrots along with salt for 2 minutes.
Now, add the all purpose flour and corn flour and stir it well.
Next add the shredded chicken along with organic herbs and mix it for a minute.
Now add the half cup of milk to it and mix well until it becomes a smooth consistency.
Next add the chicken broth and bring to boil. Once boiled close the lid of the pan and allow it to simmer for 2 minutes and switch off the flame.
Your yummy nutritious cream of chicken soup is ready. Transfer to a serving soup bowl and serve hot. Enjoy with toasted bread slices.
