Basmati rice - 2cups
Eggs - 5
Big onion - 3
Tomatoes - 3
Green chilli - 3 to 4
Coriander leaves - 1 handful
Mint leaves - 1 handful
Ginger garlic paste - 1 tbsp
Curd - 1 cup 150 ml
Kashmiri Red chilli powder - 1tsp
Turmeric powder - ¼ tsp
Garam masala powder - ¼ tsp
Salt - 1½ tsp or as required
Olive oil - 3 Tbsp
Ghee - 2 Tbsp
Prep work
Soak the basmati rice in adequate water for 15 minutes in a bowl after rinsing the rice with clean water 3 to 4 times.

Meantime slice the onions, tomatoes, slit the green chillies, chop the coriander, mint leaves and keep them aside.
Then to a heated pan add ½ tsp of ghee and add the soaked rice, gently mix for a minute and cook it by adding 4 cups of water and salt (½ tsp) with lid closed over a medium flame, which approximately takes 5 to 6 minutes to cook the rice.
Cooking steps
To a heated wide pan or biryani pot, pour the oil and ghee. Once hot add the crushed spices, cloves, cardamom, cinnamon, bay leaves and allow it to splutter.
Add the sliced onions and green chillies and sauté for 5 minutes over medium flame until the onions becomes translucent.
Add the raw eggs one by one by breaking them into half and scramble them.
Once the eggs are well scrambled and cooked, which will take approximately 2 minutes, then add the ginger garlic paste, chopped coriander, mint and sauté for a minute.
Now add the sliced tomatoes along with salt and sauté them until it becomes soft for 5 to 6 minutes.
Then add the red chilli powder, turmeric powder, garam masala powder and mix them for a minute.
Add the curd and mix for 2 minutes until the raw smell of curd fades away.
Now add the cooked rice and mix gently along the masalas for a minute and cook them over a low flame for 2 minutes.
Then place the pot over a heated iron tawa and close the pan with aluminium foil paper tightly and place the lid on top and leave it for 2 minutes and then switch off the flame.
Let it remain so for about 10 to 15 minutes over the preheated tawa. Then, transfer to a serving bowl. Garnish with fried onions.
