Indian Masala Tea / Masala Chai / Chai Latte

What’s a drink that feels like a warm hug on a rainy evening as you settle down on your favourite couch to read your favourite book or watch your favourite Netflix series? None other than the Classic Indian Masala Chai - perfect for rainy evenings and misty mornings as well. As we are on the break of winter, I thought I’d share my version of this blissfully balanced beverage that has multiple health benefits.

Prep time 2 minutes / Cooking time 10 minutes

Servings -2

Ingredients:

  • Water - 1 ½ cup

  • Milk - 2 cup (1cup = 200ml)

  • Tea powder / tea leaves of choice -1 tablespoon

  • Sugar - 3 teaspoon

Spices :

  • Cloves -3

  • Green Cardamom -2

  • Star aniseed - 2 petals

  • Cinnamon sticks - half inch

  • Ginger - half inch cube size

  • Black pepper corns 4 (optional)

  • Nutmeg quarter inch (optional)


Prep work

Crush all the spices and ginger using mortar and pestle. keep it aside.


Cooking process

To a small pan add 1½ cup of water and bring to boil .


Once the water is boiled add the crushed spices and ginger along with tea powder/tea leaves and allow to boil for a few minutes over medium flame until the aroma of spices are infused with the tea decoction.


Now add 2 cups of milk and allow it to boil for a few minutes while stirring in between so that the milk doesn’t overflow. Once boiled, simmer for 3 minutes.


Now add sugar to taste and mix well.

Switch off the flame. Cover it with lid and let it rest for a minute.

Strain the tea and then transfer to tea cups.


Serve it hot and enjoy with breakfast or snack time with some biscuits, samosas or rusks of your choice.


Cooking tips :

  • Milk of choice can be skimmed milk, toned milk, almond milk.

  • Quantity of milk can be adjusted according to preference.

  • Sweetener can be used instead of white sugar.

  • Masala chai powder can also be homemade and kept for use by powdering all the spices in equal proposition in a blender jar .
