Mutton breast bone and rib rasam / bone broth / Nenju elumbu rasam / Markandam rasam

A unique soupy South Indian dish packed with nutrients, has medicinal properties, cooked with mutton breast bone, onions, tomatoes, green chilli, ginger and Indian masalas, seasoned with grated coconut and tempered with curry leaves, making this a tempting and irresistible dish. Ingredients:

For cooking in the pressure cooker:

  • Breast Bone - ½ kg

  • Onion - 1 Large .finely chopped

  • Small onions/shallots - 5 finely sliced

  • Tomato - 1 medium size finely chopped

  • Green chilli - 1(slit)

  • Ginger - I inch size grated

  • Water - 4 cups

  • Home made mix Coriander powder - 1 tbsp ( as mentioned below)

  • Red Chilli powder - 1½ tbsp

  • Salt -1 tbsp or as required


For home made mix coriander powder:

  • Coriander 1 tbsp

  • Pepper ½ tbsp

  • Jeera ½ tbsp

  • Fennel ½ tbsp

  • Dry roast the above ingredients in a heated pan under medium flame for 1 minute and then grind it in a mixie jar to a fine powder.


For tempering:

  • Sesame/Gingelly oil - 1 tbsp

  • Mustard seeds - 1 tsp

  • Urad dal - 1 tsp

  • Fenugreek - ½ tsp

  • Jeera - ½ tsp

  • Finely chopped shallots - 4

  • Curry leaves

Note:

  • 1 tbsp = one tablespoon

    • 1 tsp = one teaspoon

Prep work:

Cut the chest bones to desired size chunks

Rinse thoroughly with 5 to 6 changes of water until the water runs clear.


Cooking method:

In a pressure cooker add all the ingredients mentioned above and close the lid. Place the weight valve and cook for 5 whistles over a medium flame.

Wait for the pressure to be released (about 10 minutes).


Once done open the lid and add 1 tbsp grated coconut and simmer for 5 minutes over a low flame until it blends with the masala and reduces to a soupy broth. Transfer this to a serving bowl.


Next To a heated small pan add 1 tbsp of oil.

Once the oil is hot add mustard seeds, urad dal, fenugreek, jeera.

Once it splutters add the chopped shallots and sauté till they turn deep golden brown.

Now add the curry leaves and once it splutters add this to the bone rib rasam to garnish it.


Your yummy Mutton Breast bone rib rasam is now ready to serve .

Goes well with cooked rice.
