Peanut salad

Hi all ! Presenting a quick healthy recipe starring peanuts and vegetables.

Cooking time - 10 minutes


Ingredients:-

  • Boiled peanuts - 1 cup

  • Grated carrots - ¼ cup

  • Grated cabbage - ¼ cup

  • Grated onions - ¼ cup

  • Salt - ½ tsp

  • Few Chopped Coriander leaves

  • Few Chopped Curry leaves

  • Olive oil - 1 tsp

Prep work :

First wash and rinse the groundnuts along with the shells several times until the water becomes clear. Then cook it with sufficient water in a pressure cooker for 5 whistles.

Once the the pressure settles, take out the cooked groundnuts and drain the water.

Remove the shells and take out the peanuts and keep it in a bowl. Wash and rinse all the required vegetables and cut as mentioned.


Cooking method:

To a heated pan add 1 tsp of oil. Once the oil is hot add the onions, carrot, cabbage, cooked peanuts, and sauté for a minute. Add salt, coriander, curry leaves and then give a gentle mix.

Sprinkle some black pepper powder and transfer to a serving bowl.


Your warm, crunch and nutritious peanut salad is ready.
