Sweet Pongal / Sakkarai Pongal / Pongal festival special


Happy pongal wishes from Dr.Bella's Cuisine!!!


Pongal !! A harvest festival of thanksgiving and to honour nature by offering the products of nature celebrated for thousands of years by the people of Tamil Nadu. This festival is celebrated on the first day of Tamil month THAI which falls in mid January.

Sweet Pongal is highly nutritious and energy giving as it is combined with rice and moong dal which gives you enough calories from carbohydrates and protein. #SweetPongal #PongalSpecial #ThanksGiving

It’s prepared with cooked rice with moong dal blended with jaggery syrup, coconut milk, enriched with roasted cashews, raisins in ghee and flavored with cardamom.

Cooking time :

Prep 15 minutes

Cooking 30 minutes

Ingredients:

  • Raw rice - 1 cup

  • Moong dal - ¼ cup

  • Jaggery powder - 2 cup

  • Grated Coconut - ½ cup

  • Cashews - 20

  • Raisins - 20

  • Cardamom powder - 1 tsp

  • Ghee - 2 to 3 tablespoons.

Prep work :

Rinse the rice and moong dal with clean water 5 to 6 times and soak for 10 minutes.


Cooking process:

Cook the rice and moong dal with 4 cups of water for 5 whistles in a pressure cooker.


Meantime extract the coconut milk from the grated coconut with half a glass of warm water in a mixer to get a half a cup of coconut milk and keep aside.


Then to a heated pan add 1/4 cup of water and the jaggery powder to make jaggery syrup. You should get 2 cups of syrup over a medium flame. Filter this syrup to a bowl and keep aside.


Now check the rice and moong dal. Open the pressure cooker once the pressure is released and mix the rice and dal to make it soft. Add the jaggery syrup and mix well over a low flame.


Next add the coconut milk, mix well over a low flame to a thicker consistency. Then season with cardamom powder and give a gentle mix.


To another heated small pan add the ghee. Once hot add the cashews and raisins, saute until it turns golden brown and add to the pongal.


Your yummy delicious sweet pongal is ready.

Transfer to a serving bowl and enjoy.
