Ingredients
Medium size Sweet potato 4
Onion 1
Green chilli 1
White pepper powder 1/4 tsp
Red chilli powder 1/4 tsp
Salt 1/2 tsp
Oregano seasoning 1/4 tsp
Coriander leaves few sprigs
Cooking oil 1 Tbsp
Prep work
Wash the sweet potato multiple times with running water and clean it thoroughly.
Cook it in a pressure cooker with adequate water for 3 whistles.
Once done peel the skin and dice into one inch size chunks and keep aside.
Cooking method
To a heated pan add oil. Once the oil is hot add the chopped onion and green chilli, sauté for 2 minutes over a medium flame.
Add the cooked, diced, sweet potatoes and sauté for a minute gently.
Then add the white pepper powder, red chilli powder, salt and sauté along with the potato for 2 minutes taking care to avoid mashing the sweet potato chunks.
Season with oregano and finely chopped fresh coriander.
Transfer to a serving plate and enjoy your yummy healthy sweet potato fry.
