Sweet Potato Fry

A simple recipe but a very healthy dish, easily prepared with readily available ingredients.

Sweet potato is a sweet starchy root vegetable. When consumed after cooking it is an enormously nutrient rich food, full of fibre, vitamins, minerals and antioxidants, which have anti-cancer properties, promotes gut health, supports immune system and prevents night blindness. #SweetPotato #FullOfFibre #NightBlindness

It’s cooked in different ways. Here I have presented a very simple and easy method.

Here we go !!

Cooking time - 20 minutes

Prep - 10minutes

Cook - 10minutes


Ingredients

  • Medium size Sweet potato 4

  • Onion 1

  • Green chilli 1

  • White pepper powder 1/4 tsp

  • Red chilli powder 1/4 tsp

  • Salt 1/2 tsp

  • Oregano seasoning 1/4 tsp

  • Coriander leaves few sprigs

  • Cooking oil 1 Tbsp

Prep work

Wash the sweet potato multiple times with running water and clean it thoroughly.

Cook it in a pressure cooker with adequate water for 3 whistles.

Once done peel the skin and dice into one inch size chunks and keep aside.


Cooking method

To a heated pan add oil. Once the oil is hot add the chopped onion and green chilli, sauté for 2 minutes over a medium flame.


Add the cooked, diced, sweet potatoes and sauté for a minute gently.


Then add the white pepper powder, red chilli powder, salt and sauté along with the potato for 2 minutes taking care to avoid mashing the sweet potato chunks.


Season with oregano and finely chopped fresh coriander.


Transfer to a serving plate and enjoy your yummy healthy sweet potato fry.
