Tricolour vegetable poriyal

Hi all!!!

Presenting an easy and simple veg recipe, a nutritious veg poriyal with tricolour vegetables - green beans, orange carrots and white cabbage representing the Indian flag colour.

This poriyal is one of the most famous and common poriyals of all time, and consumption reduces the risk of Diabetes mellitus, obesity, heart disease and maintains overall health. #Beanscarrotcabbageporiyal

Prep - 10 minutes

Cooking time - 15 minutes

Ingredients

  • Onion - 1 small size (chopped)

  • Green chilli - 2 (slits)

  • Cabbage -1 medium size (shredded)

  • Carrot - 1 (grated)

  • Green beans - 10 (finely chopped)

  • Curry leaves few

  • Coconut - grated 1 Tbsp

  • Salt - 1½ tsp or as required

  • Cooking oil 1 Tbsp

  • Mustard seeds ½ tsp

  • Urad dal ½ tsp


Prep work

Wash and rinse all the required vegetables and cut as mentioned.


Cooking steps

Add oil to a heated pan over a medium flame. Once the oil is hot add the mustard seeds, urad dal and curry leaves. Allow it to splutter, then add the chopped onions and green chillies and sauté until the onions become translucent.


Now add the chopped green beans and sauté for 2 minutes, then add the shredded cabbages, mix and cook for 4 minutes, then add the grated carrots and mix and cook for another 2 minutes.


Now add salt and grated coconut and give a gentle mix and turn off the flame. Not to be overcooked so to retain the nutrients.


Your yummy, simple, easy and healthy tricoloured beans carrot cabbage poriyal is now ready.
