Veg kurma /Mixed vegetable curry

A mouthwateringly delicious , nutritious yet an easy South Indian dish packed with vitamins and nutrients, prepared with melange of spices , mixed vegetables, enriched with creamy cashew coconut mixture.#VegKurma #MixedVegetableCurry #CashewCoconut


Ingredients:


VEGETABLES:

  • Onion 1 medium size - finely sliced

  • Tomato 1 medium size -cut into small pieces

  • Carrot 2 diced into half an inch cube size

  • Potato 2 diced into a half an inch cube size

  • Green Beans -12 cut into half an inch length pieces

  • Green peas 1/4 cup

  • Green chilli 1 - cut into half and slitted

  • Coriander leaves - few

  • Ginger garlic paste 1 tsp


SPICES:

  • Bay leaf 1

  • Cloves 4

  • Cardamom 1

  • Cinnamon 1 stick

  • Star aniseed 1


TO GRIND :

  • Jeera 1/2 tsp

  • Fennel / saunf 1/2 tsp

  • Poppy seeds 1/2 tsp

  • Cashews - 6

  • Grated coconut 1/2 cup


MASALAS:

  • Coriander powder-1tsp

  • Red chilli powder- 1 tsp

  • Garam Masala 1/4 tsp

  • Turmeric powder 1/4 tsp

  • Salt 1 tsp or as required.


MISCELLANEOUS:

Cooking oil 2 tbsp


Prep work :

Wash all the vegetables, peel the skin of onion, carrot and potatoes, remove the edges of beans and cut the vegetables as mentioned and keep aside.


In a dry heated pan roast the jeera, saunf and poppy seeds few seconds .

To this add 1 tsp of oil and roast the cashews till brown see that not to be burned and add the grated coconut and fry for a minute.

Grind the above mix with adequate water in a mixie to a fine mixture. Keep it aside.


COOKING METHOD:

Add 2 tbsp of oil to heated pressure cooker pan.

Season with the crushed spices. Once the spices splutters add the onion and green chilli, sauté for 2 minutes under medium flame till it turns light brown.


Add ginger garlic paste and sauté for a minute till the raw smell leaves.

Then add all the vegetables with coriander and sauté for a minute.

Add the masala ingredients along with salt and sauté for 2 minutes.


Now add 1 cup of water (250 ml) and mix gently.

Close the cooker with the lid and cook for 1 whistle. Wait for the pressure to be released .


Now open the lid and add the grounded mixture of cashews and coconut to this and cook for 3 minutes under low flame by gently stirring intermittently.

Add the turmeric and Garam masala powder, mix and cook to a desired consistency

Switch off the flame.


Transfer to a serving bowl.

Garnish with coriander and serve hot .

Enjoy your delicious 😋 veg kurma .

Pairs well with cooked rice , idly, dosa and Chapathi .
