Vegetable Pulao

A satisfying all time favourite dish especially for kids.

Can be Cooked in a pot, pressure cooker or an electric cooker.

I prefer cooking this in an electric cooker.


Ingredients :

  • Basmati rice 1½ cups

  • Onions - 2 .. finely sliced

  • Carrot -1 diced into half inch cubes

  • Beans - 12 to15 cut into half inch length

  • Peas - 1 small cup

  • Green chill - 2 to 3 slit

  • Coriander leaves - few

  • Mint leaves- few

  • Bay leaf -1

  • Cloves - 4

  • Cinnamon - 1 stick

  • Cardamom - 2

  • Star aniseed -1

  • Ginger garlic paste -1 tsp

  • Salt 1 tsp or as required

  • Oil - 2 tsp

  • Ghee - 3 tsp

  • Broken Cashew - few

  • Curd 100 ml

  • Oil - 2tsp

  • Ghee - 2 tsp


Prep work:

Wash all the vegetables, clean and cut as mentioned and keep aside.

Wash the rice until the water runs clear and drain. Add fresh water and soak, keep aside for 20 minutes.


Cooking method:

Add 2 tsp of oil and 2 tsp of ghee to a heated pan.

Once the oil is hot add cinnamon, bay leaves, cardamom and cloves. Saute till it sizzles over a medium flame.

Add sliced onions, slit green chillies and sauté until the onions turn light brown in colour.

Add ginger garlic paste and sauté for a minute untill the raw smell leaves.


Add chopped coriander and mint leaves and sauté for a minute.

Add the mixed vegetables (carrot, beans and peas) and keep stirring for 2 minutes.


Then add half a cup of curd and stir for a minute.

Add the soaked and drained rice, keep stirring for a minute.


Add 3 cups of water and transfer this to an electric cooker. Now add 1 tsp of salt, mix and switch on the cooker.

Cook until the switch button pops up indicating rice been cooked.


Next In a small heated pan add 1 tsp of ghee, roast the cashews to garnish.

Transfer the cooked pulao to a serving bowl.


Garnish with few coriander leaves and roasted cashews. Serve hot and enjoy your yummy veg pulao. Best combination for this is boiled egg masala and onion cucumber raitha .
